These brownies are beasts, seriously.

I’ve always had this inner urge to stack 3 dozen or so Oreo cookies in a pan, and to top them with thick, gooey brownie batter – just to see how they turn out after being baked at 350 for 40 minutes…

SO, given a whole afternoon of baking to myself; a huge jar of creamy peanut butter and 3 bags of chocolate chips…I did just this.

Then it just seemed natural to invite a a peanut butter Blondie base + some cookie dough frosting to join this immense food fest too…

And then, the beastliest brownie in the history of ALL BROWNIES EVER was born:

2 whole packs of Oreos fulfilled their ultimate destiny, and a bunch of vanilla beans married some cookie dough: There are no words; only cravings and crumbs:

Also, it seems like elsewhere in the food blog-osphere, these brownies have been (rightly) known as “Slutty Brownies”… or worse, “Man whore bars”…but most of them haven’t put cookie dough on top as well. But I did. Muahaha.

Peanut butter continues to make history. I kid you not.

Oh, and apparently – the tray is the limit. I still think that a layer of Nutella swirl cheesecake wouldn’t have gone amiss if there had been a couple of extra inches in the tray to spare… 😉

I am also extremely happy with my new purchase – a LITRE of vanilla bean paste! OMG! Anyone who bakes regularly using those teeny ass little bottles of (artificial) vanilla extract will have long clocked what a huge commercial rip off they are…And whilst some places are selling small jars of paste for around 5 x the price, if Amazon offers you real vanilla bean paste in 900ml bottles for less than £20…then Amazon will fulfil your dreams. This stuff is amazing! (This is a personal, not a paid recommendation) My cookie dough had real vanilla beans in it, and I have enough of the stuff to pour into my morning oats without having to put it on the shopping list for the 3rd time this month.  Even if you can’t get your hands on a bulk bottle, I suggest that everyone who likes to bake buys the real bean stuff because you will never look back – if you haven’t already heard it; there is truly a world of difference between the flavour of vanilla bean paste vs. beanless extract (which most of the time is not even extracted from vanilla – but coal tar, which is cheap and contains vanillin…).

But back to the brownies! – There is nothing better than rich, dense, and flavoursome baked goods which you can properly sink your teeth into and temporarily get utterly lost in. I mean, isn’t this is why brownies and cookie dough exist at all? I can’t even emphasize the bliss of this combination enough. You won’t give yourself the chance to notice yourself slipping into a sugar/chocolate chip coma.

The peanut butter base is firm and fudgy, but crumbly too. I melted white chocolate into it. Oops. The Oreos are, well…Oreos. The brownie recipe here is perfect – fudgy, dense, rich, and scattered with gooey chocolate chunks.  The cookie dough is honestly – perfect. It tastes like the cookie dough from a cookie brownie I once bought at a food market. It tastes like COOKIE DOUGH basically. It is firm, sweet, buttery and perfectly whippy too. I hadn’t actually intended to make the cookie dough layer – but I something went horribly wrong with the white chocolate marble effect that I was initially vouching for and I felt compelled to cover it up with something that would blissfully conceal the mistake – cookie dough.

SO, are you ready to feed your peanut butter addiction now?

Peanut butter Blondie base:

  • ½ C salted butter
  • ½ C creamy peanut butter
  • ¼ C white sugar
  • ¼ C brown sugar
  • ½ C white flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 large egg
  • 100g melted white chocolate.
  • Optional chocolate chips (I say optional but we all know that there isn’t really an option about it 😉
  • Extra pinch of salt

Oreo layer:

  • 2 tubes of Oreos (about 30-35 biscuits)

Fudge brownie:

  • ½ C soft salted butter
  • ¾ C sugar
  • ¼ C brown sugar
  • ½ C + 2 tbsp white flour
  • ½ C cocoa powder
  • 100g white or dark (or both?!) chocolate chips.
  • 3 large eggs
  • 1 tsp instant coffee ( it is a chocolate flavour enhancer)
  • 1 tbsp vanilla bean paste
  • Extra pinch of salt
  • Splash of milk (any kind).

Cookie dough frosting:

  • ½ C soft salted butter
  • ½ C brown sugar
  • ¼ C flour
  • ½ C icing sugar
  • Pinch of salt
  • ¼ C heavy cream
  • 1 tbsp vanilla bean paste
  • 100g of dark chocolate drops.
  1. Make the peanut butter base first – cream the butter with the sugar, vanilla, and salt. Add the peanut butter, and then beat in the egg, before mixing the dry ingredients with the wet ingredients. Add the melted white chocolate last and stir it all in. Spoon it out onto a lined and greased 9 x 13 inch baking tray.
  2. This is fun: Layer the peanut butter Blondie base with the Oreos – however you like!
  3. Brownies: Once again, start off by creaming the butter, sugar, and eggs. Add the dry ingredients next. Once all of the ingredients are together, add the milk to make the brownie batter pourable, although ensure to keep it thick.
  4. Bake at 350F/180*C for 35-40 minutes or until an inserted toothpick comes out clean. Your house is going to smell AMAZING as this decadence bakes away…
  5. Let cool for 10 minutes in the oven, before letting it stand out for 2 hours before cutting (cast your impatience aside, the wait for a perfect cross section is actually worth it!)
  6. But don’t forget that warm brownies fresh out of the oven are one of life’s greatest pleasures. You know you don’t really want to wait – grab a spoon.

Cookie Dough Frosting:

  1. Start off by creaming the softened butter with the 2 sugars.
  2. Add everything else, and keep stirring until it is whippy and thick.
  3. Refrigerate for about 15 minutes before spreading over your tray of deliciousness (any longer and it will harden).

The only thing that I would really change would be the layout/quantity of Oreos. I wish I could have gotten some better cross section photographs – I don’t know if the lack of Oreo in the photos was due to the way I cut the brownies or placed the Oreo’s. It seems a bit excessive (even for me) to have added another pack…but then again you probably won’t be compulsively photographing them like me… The taste is nonetheless absolutely amazing because the Oreos are well and truly lurking in there.

I still can’t believe that these beasts came out of our very own oven. They are simply too immense for words. And be warned: the recipe makes A LOT. I’d say about 12-16 squares – but they are HUGE. You might need to cut these squares into halves. They’re the kind of things that you wish you could eat for forever and a day but you know that you really shouldn’t – so you don’t. We are going to be freezing the remainder of ours tonight!
