Let’s talk about brownies:

Glazed Cheesecake Chocolate Fudge Brownies (The only brownie recipe you will ever need again, ever).  These are incredibly fudgy, moist, gooey, molten, and intensely RICH!! <3

I’m talking thick and fudgy cheesecake brownies – The kind of brownies topped with a super creamy vanilla cheesecake, and marbled with the thickest + world’s most perfect chocolate swirls…Yep. Now they are what I actually had in mind…

But they didn’t happen. And neither did these, or these. Ow.

But hey, THESE DID:

Don’t you just love *that* awkward moment when you’ve promised your study group pretty looking, swirly cheesecake brownies, but the cheesecake part of it decides to arrive looking like an egg washed sheet?! Er.

Whilst part of me is still a bit upset at the cheesecake brownie that could have been, the other half of me couldn’t care less. Why? Because hands down, the recipe for the world’s chunkiest, fudgiest and most decadent brownie in the world has just been discovered. This is absolutely monumental, guys.

I tried to come up with a half creative instagram hashtag for these things whilst they were still fresh out of the oven, but #icouldnoteven.

As much as I would have liked to share with you the secret to properly swirled cheesecake delight, I can’t because I really do suck at baking-decor. I can bake however. I can share with you the brownies that will seduce anyone via their intense, chocolate filled fudgy bliss. (Never judge a brownie by its overcooked cheesecake)

If you only want the brownies, then go ahead and make them, but if you do want to try out the cheesecake layer – I would recommended checking the oven at about 30 minutes in. I only took the first look at mine when the 45 minutes were already up, so it was too late to save them from tanning. The layer provides an extra layer of silky vanilla, which magically enhances the brownie – even if it doesn’t look as amazing as any other cheesecake brownie should!

The worlds-greatest-ever brownies ever  (like, ever).

  • 1 C Salted butter, melted.
  • 2 ½ C white sugar
  • 1.5 C flour
  • 1 ¼ C cocoa powder
  • 2 C dark chocolate chunks
  • 1 x tbsp vanilla
  • 1 tbsp baking powder
  • 3 eggs (or 4 if they’re really small like mine were).


  • 250g/8oz cream cheese
  • 2/3 C sugar
  • 1 tsp vanilla
  • 2 egg yolks.
  • One of the recipes I included above used 1/3 C double cream here also. Although I opted out of this, it would probably make a good + creamy addition.
  1. Cream the butter and the sugar, add the vanilla (the bowl will smell amazing…)
  2. In a separate bowl, combine the dry ingredients.
  3. Mix the wet with the dry. Throw in the chocolate chips, and add the egg to bind the mixture.
  4. Pour the fudgy goodness into a 9 x 13 baking tray lined with parchment.
  5. Combine all of the cheesecake ingredients into a bowl + mix well.
  6. Make trenches in the chocolate brownie mixture and pour the cheesecake into it, swirling it with a knife as you go.
  7. Bake for 35-40 minutes, checking it at around 30 mins to check that the top hasn’t over-browned (ahem).

It is ridiculously hard to not eat the entire tray. I recommend keeping a group of foodie friends on permanent standby for bakes like these…<3

  • Note to self: Buying more cocoa powder in advance before it runs out mid-brownie sesh would be a great idea.

And ooh, Happy Halloween everyone! Are you making anything pumpkin-filled and amazing?!  I still have some pumpkin cookies to share with you once chocolate-chip stuffed things like brownies and chickpea cookies stop jumping the blog line. It’s also only 8 Sundays until Christmas!! And like August + October, November is one of those funny 5-week long months. I am really excited about seeing all of the Christmas lights turn on throughout central London throughout next month; there is nothing more iconic about Christmas in London than the overhead sight of Oxford Street being lit up by lanterns and reindeer lights –we’re in definitely photo-spree season.

    Haha, that’s hilarious that this is what you posted – I just made a pan of cheesecake “swirled” brownies! But, like you, the swirling part didn’t come off quite like I envisioned. Although they were still really tasty. I’m gonna have one more go at the swirling part before posting! You can always have more brownies around right?! These tasted amazing I’m sure!

      It’s a pretty basic brownie recipe really so that doesn’t surprise me at all, the key = the tiny amount of flour vs the mass of butter. Makes for the fudgiest brownie ever as I’m sure you know! Thanks for the comment Amanda x
